Callebaut - Dark Chocolate Couverture 811
Callebaut 811 dark chocolate is a popular, well-balanced, chocolate couverture with a subtle vanilla note and a consistent, smooth cocoa flavour.
The Callebaut 811 recipe is the leading choice for an all-round chocolate for use in confectionery; like caramels, chocolate clusters, chocolate spreads, cream and butter filling, ganache and truffles, as well as in patisseries and desserts; for use in bavarois, custards, ganaches, glazes, mousses, fondant and sponges.
Due to it's unique 'callet' shape, this chocolate is exceptionally easy to melt, temper or even to use as chocolate chips for baking. The 'callet' shape allows melting to be much more consistent, due to the larger surface area.
